My brother and his wife sent along this photo from Concordia College, Moorehead, Minnesota. The school mascot is an imposing corn. They are the Cobbers.
But if you're going to compare Cobbers and Spuds, you're going to have to get Moorhead right. Unless you're also a Bemidji Beavers fan, in which case you're free to change the spelling to accomodate their football banners, "Beavers want MoreHead." (Seriously, the banners they're everywhere.)

Arguably, Moorehead is a fiefdom of North Dakota, though. I believe there's a junta in place.

And then there's the old Beaver College in Pennsylvania. And it was a women's college. They wisely changed it to Arcadia University back in 2000:
